Motichoor ladoo is made from tiny fried gram flour pearls (boondi) mixed with sugar syrup, then shaped into soft laddoos. 🍊

Ingredients

  • 2 cups Gram flour (besan)

  • 1½ cups sugar

  • 1 cup water

  • 2 tbsp milk

  • Orange food color (optional)

  • ½ tsp cardamom powder

  • 2 tbsp chopped pistachios or almonds

  • 2 tbsp melon seeds (optional)

  • Ghee or oil for frying

Method

1. Make batter

  • Mix gram flour with water to make a smooth flowing batter (not too thick, not too thin).

  • Add food color if using.

2. Fry boondi

  • Heat oil/ghee in a pan.

  • Hold a perforated ladle over oil and pour batter through it to form tiny boondi.

  • Fry for 30–40 seconds only (don’t make crispy). Remove and repeat.

3. Make sugar syrup

  • Boil sugar + water until slightly sticky (1-string consistency not needed; just mildly sticky).

  • Add cardamom powder.

4. Mix

  • Add warm boondi into warm syrup.

  • Mix chopped nuts and seeds.

  • Cover for 10–15 mins so boondi absorbs syrup.

5. Shape laddoos

  • When mixture is warm, mash lightly with hands or spoon.

  • Grease palms and shape into round laddoos.

6. Garnish

  • Top with pistachios or silver leaf if desired.

Tip: For market-style soft motichoor ladoo, grind half the soaked boondi mixture for a few seconds before shaping.
